3 Morning breakfast with high protein low fat

1. Super-Duper Oatmeal

List of Ingredients:

  1. 1 cup milk
  2. 1/2 cup water
  3. 3/4 cup oats
  4. 1/2 cup blueberries
  5. 1/2 cup applesauce
  6. 2 tablespoons wheat germ
  7. 2 teaspoons ground cinnamon
  8. 2 teaspoons sugar

How to cook

  1. Bring the milk and water to a boil in a pot.
  2. Mix in the oats, and reduce heat to medium.
  3. Stir in blueberries, applesauce, wheat germ, cinnamon, and sugar.
  4. Cook 8 to 10 minutes, or until oats are tender.

2. Tofu Quiche with Broccoli

List of Ingredients:

  1. 1 (9 inch) unbaked pie crust
  2. 1 pound broccoli, chopped
  3. 1 tablespoon olive oil
  4. 1 onion, finely chopped
  5. 4 cloves garlic, minced
  6. 1 pound firm tofu, drained
  7. 1/2 cup soy milk
  8. 1 teaspoon Dijon mustard
  9. 1/2 teaspoon salt
  10. A teaspoon ground nutmeg
  11. A teaspoon ground red pepper black pepper to taste
  12. 1 tablespoon dried parsley #
  13. 1/2 cup Parmesan flavor soy cheese

How to cook

  1. Preheat oven to 400 degrees F (200 degrees C.
  2. Bake pie crust in preheated oven for 10 to 12 minutes.
  3. Place broccoli in a steamer over 1 inch of boiling water, and cover.
  4. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  5. Heat oil in a large skillet over medium-high heat.
  6. Saute onion and garlic until golden.
  7. Stir in the cooked broccoli and heat through.
  8. In a blender, combine tofu, soy milk, mustard, salt, nutmeg, ground red pepper, black pepper, parsley and parmesan soy cheese; process until smooth.
  9. In a large bowl combine tofu mixture with broccoli mixture.
  10. Pour into pie crust.
  11. Bake in preheated oven until quiche is set, 35 to 40 minutes.
  12. Allow to stand for at least 5 minutes before cutting

3. Banana Breakfast Cookies

List of Ingredients:

  1. 3 very ripe bananas
  2. 2 cups rolled oats #1 cup raisins
  3. 1 cup plain yogurt
  4. 1 teaspoon ground cinnamon

How to cook

  1. Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper.
  2. Mash bananas in a large bowl.
  3. Add oats, raisins, yogurt, and cinnamon.
  4. Mix well and allow to sit for 15 minutes.
  5. Drop spoonfuls of dough 2 inches apart onto the prepared cookie sheets.
  6. Bake in the preheated oven until lightly browned, about 20 minutes.
