3 Morning breakfast with high protein low fat
1. Super-Duper Oatmeal
List of Ingredients:
- 1 cup milk
- 1/2 cup water
- 3/4 cup oats
- 1/2 cup blueberries
- 1/2 cup applesauce
- 2 tablespoons wheat germ
- 2 teaspoons ground cinnamon
- 2 teaspoons sugar
How to cook
- Bring the milk and water to a boil in a pot.
- Mix in the oats, and reduce heat to medium.
- Stir in blueberries, applesauce, wheat germ, cinnamon, and sugar.
- Cook 8 to 10 minutes, or until oats are tender.
2. Tofu Quiche with Broccoli
List of Ingredients:
- 1 (9 inch) unbaked pie crust
- 1 pound broccoli, chopped
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 pound firm tofu, drained
- 1/2 cup soy milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- A teaspoon ground nutmeg
- A teaspoon ground red pepper black pepper to taste
- 1 tablespoon dried parsley #
- 1/2 cup Parmesan flavor soy cheese
How to cook
- Preheat oven to 400 degrees F (200 degrees C.
- Bake pie crust in preheated oven for 10 to 12 minutes.
- Place broccoli in a steamer over 1 inch of boiling water, and cover.
- Cook until tender but still firm, about 2 to 6 minutes. Drain.
- Heat oil in a large skillet over medium-high heat.
- Saute onion and garlic until golden.
- Stir in the cooked broccoli and heat through.
- In a blender, combine tofu, soy milk, mustard, salt, nutmeg, ground red pepper, black pepper, parsley and parmesan soy cheese; process until smooth.
- In a large bowl combine tofu mixture with broccoli mixture.
- Pour into pie crust.
- Bake in preheated oven until quiche is set, 35 to 40 minutes.
- Allow to stand for at least 5 minutes before cutting
3. Banana Breakfast Cookies
List of Ingredients:
- 3 very ripe bananas
- 2 cups rolled oats #1 cup raisins
- 1 cup plain yogurt
- 1 teaspoon ground cinnamon
How to cook
- Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper.
- Mash bananas in a large bowl.
- Add oats, raisins, yogurt, and cinnamon.
- Mix well and allow to sit for 15 minutes.
- Drop spoonfuls of dough 2 inches apart onto the prepared cookie sheets.
- Bake in the preheated oven until lightly browned, about 20 minutes.
